The Best Keto Quiche
Ingredients
CRUST:
- 1 1/4 cups almond flour, blanched
- 1 1/4 cups Parmesan cheese, freshly grated (or Hard Gouda cheese)
- 1/4 teaspoon Sea Salt
- 1 egg, beaten
Filling:
- 1/2 cup chicken, or beef bone broth (vegetable broth if vegetarian)
- 1 cup Swiss cheese, grated
- 4 ounces cream cheese
- 1 tablespoon butter, melted
- 1/3 cup leeks, minced or green onion (less starch than onions)
- 4 eggs, beaten
- 3/4 teaspoon Sea Salt
- 1/8 teaspoon cayenne pepper

Curious as to why cream cheese instead of heavy cream. Carbs? Also, a little worried about equal amounts parmesan and almond flour. Not too cheesy? Not even sure if that’s possible. 🙂
