Ingredients: 2 tbs unsalted butter; 1/2 lb ground beef 85% lean; 1/2 cup onion (chopped); 2 tbs Taco Seasoning (pg 110 in Quick and Easy cookbook or our mix in Shop); 1/4 cup tomato sauce; 8 large eggs (beaten); 1/4 cup beef broth; 3/4 cup Monterey Jack cheese (or sharp cheddar-shredded); 1 oz cream cheese ((2 TBS) ); 1 tsp garlic (or cloves from 1/2 head roasted garlic); 1/2 cup cilantro leaves and stems (chopped fresh); 1 tsp Redmond Real Salt; 1/2 tsp black peppercorns (finely ground); marinara sauce (warmed-serving option); chives (and/or cliantro leaves for garnich)
