1/2cuplemon juice (After zesting lemons place whole lemons in microwave for 1 minute for easy juice extraction)

Beat eggs lightly in a small saucepan. Add butter and powdered swerve (or sweetener) and beat. Add lemons rind and juice. Place saucepan on burner or in double boiler at medium heat and beat with beaters or stir at all times. Reduce heat and stir until thick and smooth. Be attentive so mixture does not burn.
