Put the egg white in a medium bowl and beat on high speed with a hand mixer until stiff peaks form. Add the protein powder and your choice of spice; mix on low just until well combined, being careful not to deflate the whites.

Spray the mini waffle maker with coconut oil spray. Spoon half of the mixture into the center of the waffle maker. Cook until firm and golden brown, 2 to 3 minutes. Repeat with the remaining half of batter.
