10largeegg whites (hard-boiled or scrambled whites)
1cuplow fat coconut milk ((or unsweetened cashew milk), use 3/4 cup if using scrambled whites)
1/4cupNatural Sweetener (confectioners (or equivalent amount of liquid or powdered sweetener) )
2 1/2tablespoonsunsweetened cocoa powder
2teaspoonsvanilla extract
1/2teaspoonground cinnamon
1/8teaspoonRedmond Real Salt (or Redmond Real Salt)

Place all the ingredients into a blender and puree until very very smooth. Taste and adjust sweetness to your liking.

Place in the fridge in an airtight container for up to 4 days. Serve chilled. TIP: tastes best if left in the fridge overnight and it will thicken a lot. If desired, purée it after it thickens to loosen the pudding.
