1/2teaspooncream of tartar ((optional: for stabilizing egg whites) )
2tablespoonsunflavored egg white protein powder
1teaspoonvanilla extract ((or other extract like strawberry))
few dropsliquid stevia
avocado oil (spray or a light coating of coconut oil, for greasing the pan )

Place the egg whites (and cream of tartar) if using in a clean, dry, cool bowl and use a hand mixer on HIGH to whip until stiff peaks form.

Turn the mixer to LOW and add in the protein powder, extract and stevia.

Lightly grease a quality nonstick frypan And heat on medium-high until a drop of water will sizzle. Once it is hot, place a circle of dough on the pan.

Fry until golden brown on both sides. Remove from heat and place
on a plate. Repeat with remaining batter. Best served fresh.
