Remove steak from fridge and season all sides well with salt and pepper. Allow to sit at room temperature for 15 minutes. Heat a cast iron skillet to medium high with fat. Season prawns well with salt and pepper.
Sear the fillet on both sides cooked until your desired doneness. (see Notes).

Remove from skillet and allow to rest for 10 minutes. Meanwhile fry the shrimp in the skillet on both sides until cooked through and shrimp is no longer opaque, about 3 minutes per side.

Place steak on a plate. Top with shrimp and drizzle each plate with 2 tablespoons basil hollandaise.
