2poundsbeef chuck roast (cut into 1½- to 2-inch cubes)
2cupsbeef broth ((kettle and fire))
1cuponion (chopped)
3tablespoonscoconut vinegar (or apple cider vinegar)

Place the decaf coffee, cocoa powder, paprika and salt in a small bowl and combine well.

Rub the mixture all over the roast. Place into a slow cooker. Add broth, onion and vinegar. Cover and cook on low for 6-8 hours or until fork tender. Shred with 2 forks.
