1tablespoonbutter (melted (or coconut oil))
1ballmozzarella cheese (sliced into 1/4 inch thick slices (or 1 cup shredded))
1cupPrimal Kitchen pizza sauce (or marinara sauce (no sugar in ingredients) )
1teaspoonitalian seasoning
diced tomatoes (for garnish)

Preheat oven or toaster oven to 400 degrees F. Brush melted butter over cut sides of the eggplant. Place the eggplant on a baking sheet. Bake for 4 minutes.

Remove from oven and place 1 slice mozzarella onto each slice of eggplant. Sprinkle with Italian spices and a few pieces of diced tomato. Place back into oven for 10 minutes or until cheese is bubbly.

Meanwhile place pizza sauce on a serving platter. Place eggplant slices onto the sauce. Serve.
