For any baked item (that doesn’t require whipping the whites stiff), you can use this to replace eggs.

In general, to replace 1 egg, use 1 tablespoon of gelatin (red can) with 3 tablespoons of filtered water (room temperature).
Slowly sprinkle gelatin into water.  Then whisk vigorously until frothy.
