Waffle Eggs Benedict

Ingredients
- 1/2 cup ham, diced
- 1/3 cup sharp cheddar cheese, or mozzarella cheese, shredded
- 1 large egg
- 1/8 teaspoon Sea Salt
POACHED EGGS:
- 1 large egg
HOLLANDAISE:
- 2 tablespoons bacon fat, or butter
- 1 teaspoon Carnivore bone broth
- 1 large egg yolks
Instructions
- Preheat waffle maker to medium high heat.
- Whisk together cheese, diced ham, egg and salt.
- Pour mixture into the center of the waffle iron. Close the waffle maker and let cook for 3-5 minutes or until waffle is golden brown and set. Remove from the waffle maker and set on a plate.
- Poach the egg: Fill a large saucepan with about 4 inches of water. Bring to a simmer. Swirl the water in one direction and gently crack in the egg. Poach the egg until the whites are just cooked but the yolk is still soft and runny.Â
- Make the hollandaise: Place the bacon fat in a medium-sized saucepan and melt over medium heat. Add the broth and bring to a simmer. Whisk the yolk in a large bowl. Then, while whisking vigorously, slowly add the bacon fat reduction in a very slow, steady stream.  Season with salt to taste.
- To serve, place waffle on a plate, then top with a poached egg and a drizzle of hollandaise.
