To heal from dairy sensitivity there are two primary things.  #1 remove all grains (forever).  #2 remove all dairy (for at least a couple weeks or month). Grains damage your villi (little finger like protrusions in your intestines). You process dairy at the end of the villi.  So once your villi heal, you can try re-introducing dairy (or get stool test again).  
To test for sensitivity, weigh yourself in the morning, eat dairy that day and weight yourself the next morning. If you gained weight (water weight) then eliminate dairy for a couple more weeks. 🙂
