4leafslettuce (Boston Leaf)
4tablespoonfresh cilantro (or other herb of choice)
1tablespoontomatoes (or diced tomatoes)

Shred the slow cooker chicken thighs and discard the bones. Place the chicken in a large bowl. Add the mayo and lemon juice. Combine until chicken is coated well. Serve in large lettuce leaves. Garnish with fresh herbs, tomatoes, sliced hard boiled eggs if desired.
