Heat a large cast iron skillet to medium high heat. Add the lard. Once hot, add the cod fillets. Cook for 3 minutes, then gently flip and cook another 3 minutes or until fillets flake easily with a fork and are cooked through and no longer opaque inside. Timing will depend on the thickness of the fillet. Meanwhile, make the anchovy butter.

When the fillets are done, remove them from the skillet, place fillets on a serving tray and garnish with anchovy butter.
